Stir-Fry is a big hit in our house. I rarely make enough, and there are never leftovers. Here's a quick and easy stir-fry recipe...
-1lb of beef strips or chicken strips (I'm thinking of trying pork next time)
-1 head of broccoli
-1 red bell pepper
-1 green bell pepper
-1 or 2 onions (preference)
-2-3 tbs of soy sauce
-cornstarch for thickening
Brown the beef or chicken in a wok. Add peppers, onions, and broccoli. While all that is cooking in the wok I mix the soy sauce and cornstarch (I only add a little cornstarch to make it thicken a little). Once the vegetables are tender I add the soy sauce mixture and let cook for about 10-15 minutes on low. Serve with a side of rice. This serves my family of 4.
